Vibrant Veggies – broccoli, carrots, and zucchini

One of my favorite, quick veggie recipes.  Goes great with fish or meat or with a whole grain.

Vibrant Veggies – broccoli, carrots, and zucchini

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 4 servings of veggies

Ingredients

  • 2 cups of fresh broccoli florets
  • 1 cup baby carrots, quartered lengthwise
  • 1 medium zucchini, halved and sliced
  • 1 teaspoon safflower oil (could use any oil)
  • ½ teaspoon sea salt
  • 1/8 teaspoon pepper

Instructions

  1. In a large non-stick skillet, stir-fry broccoli and carrots in oil for 5 minutes.
  2. Add zucchini, salt, and pepper
  3. Stir-fry for an additional 4-5 minutes until vegetables are crisp-tender.

Do Ahead Prep

Wash and cut the broccoli, carrots, and zucchini.
