I needed something with a little Asian flavor plus needed to use some vegetables in the fridge. This easy and tasty recipe is the result. I imagine you could use any mild veggies. I hope you like it!
Ginger Zucchini and Carrots
Ingredients
- ½ tablespoon olive oil
- 1 zucchini sliced thinly
- 1 cup of carrots sliced
- 1 teaspoon minced garlic
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon ginger
Instructions
- Heat oil in large sauté pan. Add zucchini, carrots, and garlic.
- Saute for 5 minutes until crisp-tender.
- Add salt, pepper, and ginger.
- Serve hot.
