“Fried” Zucchini
Ingredients
- 1 large egg
- ½ cup panko bread crumbs (use whole wheat if you can)
- 3 tablespoons freshly shredded Parmesan cheese
- ¼ teaspoon dried oregano
- ¼ teaspoon dried thyme
- ¼ teaspoon dried rosemary
- ¼ teaspoon salt
- 1 zucchini, sliced in 1/8 inch rounds
- Extra virgin olive oil
Instructions
- Preheat oven to 425 degrees.
- Brush a cookie sheet with olive oil.
- Beat egg in a shallow bowl.
- Mix crumbs, cheese, and seasonings in another shallow bowl.
- Dip zucchini slices in egg and then coat on both sides in crumb seasoning mix.
- Place on the coated cookie sheet. After all zucchini slices are coated, drizzle olive oil on top.
- Bake 20-25 minutes without turning or until crisp and golden brown.
- Serve with marinara sauce.
